SHRIMP SCAMPI INGREDIENTS
1 1/2 16/20 or 21/25 Shrimp
3 Cups Clam Juice or Chicken Stock
3 oz White Wine (optional)
4-6 Cloves of Garlic
3 oz. Extra Virgin Olive Oil
2 oz. Butter
⅓ Lemon Juice
Tsp. Lemon Rind
Fresh Parsley
1 oz All-Purpose Flour
Salt and Pepper to tastes
SHRIMP SCAMPI COOKING INSTRUCTIONS
In a 3 qt. Pot, and a tbsp of salt and water and bring to a boil.
Rinse and pat dry the Shrimp and set aside. (shrimp should be dry before adding to hot oil)
Loosely chop some Fresh Parsley and set aside.
Peel and slice the and Garlic set aside.
If your water is boiling, we are not ready yet. Lower or turn off heat and cover.
Wash Lemon and grind peel into Lemon Rind
Add Extra Virgin Olive Oil to the Pan and get hot.
Make sure your water is boil at this point.
Add the Shrimp to hot oil and give then a good stir.
Now is a good time to put your pasta into boiling water.
Cook Shrimp about 75% for about 3-4 minutes, and remove from pan and set aside.
Shrimp trimmings should have stuck to the pan and that is where the flavor is.
Add a little more Extra Virgin Olive Oil to the pan along with the Garlic and Lemon Rind.
Lightly brown the Garlic and deglaze the pan by adding the Clam Juice or Chicken Stock.
If you like you can deglaze the pan with white wine before adding Clam Juice or Chicken Stock.
Take 2 one oz. cubes of soften butter and roll them around in the flour and add them to the pan. This will help thicken the sauce while it reduces.
Add Lemon Juice
Add the shrimp back into the pan and cook them in the sauce for 2 minutes.
When making Shrimp Scampi with Pasta, I like the sauce a little thicker than say with Rice which I would like the sauce to be a little looser. If you like or need you can thicken the sauce quickly with a cornstarch slurry by mixing some clam juice or chicken stock and cornstarch and slowly add it to the sauce as it thickens.
Drain and add pasta to the sauce and cook for 1 minute.
Put it on a plate.
