SALMON SUN-DRIED TOMATO AND SPINACH LEMON CREAM SAUCE RECIPE - YA'EAT

SALMON SUN-DRIED TOMATO AND SPINACH LEMON CREAM SAUCE

  • 1 1/2 lbs. Salmon

  • 2 Cups Heavy Cream

  • 3/4 Cup Sun-Dried Tomato

  • 2 cups of Spinach

  • 4 cloves of Garlic

  • ½ cup Shallot

  • 3 oz. Extra Virgin Olive Oil

  • 3 oz. Stick Butter

  • Fresh Parsley

  • Fresh Basil

  • 1 Lemon

  • 1/2 Cup White Wine

  • Salt and Pepper to tastes


SALMON SUN-DRIED TOMATO AND SPINACH LEMON CREAM SAUCE INSTRUCTIONS

  1. Put your water on to boil and cook rice, so it is ready when your Salmon is done.

  2. Inspect the Salmon for bones and scales and remove if any and portion the Salmon if needed.

  3. You can also remove and discard the Salmon skin if you like.

  4. Season Salmon with Salt and Pepper and place on the side.

  5. Chop garlic, and shallot.

  6. Wash Lemon and grind peel into Lemon Zest, and squeeze the rest into a cup, and place on the side.

  7. Prepare the Sun-dried Tomato by cutting them in half or strips.

  8. In a sauté pan add 3 oz. Extra Virgin Olive Oil and 1 oz. Butter, and melt on high heat until the butter starts to brown.

  9. Add the salmon fillets to the sauté pan with the skin side up and place in pan away for your body and cook for 2 minutes on each side and remove from pan.

  10. Add, garlic, lemon zest, shallot, and sauté until garlic lightly browns.

  11. Add spinach and sun-dried tomato cook for 1 minute.

  12. Deglaze the pan with White Wine, and cook for 1 minute.

  13. Add 2 oz. butter, 16 oz. cream, and lemon juice.

  14. Place the salmon back into the pan, along with fresh chopped parsley and basil cover, and cook for 2 minutes.

  15. Adjust seasoning with salt and pepper.

  16. Serve over rice.

  17. You are done... Nice Job : )
