PASTA FAGIOLI - PASTA FAZOOL RECIPE

PASTA FAGIOLI INGREDIENTS

  • 3 Cans Cannellini Beans | Sub with Dry Beans and Cook for 25 mins.

  • 1 Qt. Chicken Stock or Broth (maybe a little extra too)

  • 12 oz. Marinara Sauce or Canned Tomatoes

  • 4 oz. Pancetta - Diced

  • 4 oz. Pecorino Romano Cheese (grated)

  • ½ Medium Onion - Chopped

  • 2 Stalks Celery - Chopped

  • 1 Carrot - Chopped

  • 2 garlic cloves - Chopped

  • 2 oz. chopped parsley - Chopped

  • 2 oz chopped fresh basil - Chopped

  • 3 oz. Extra Virgin Olive Oil

  • (additional salt and pepper to taste)

  • 1 lb. Ditalini Pasta

PASTA FAGIOLI INSTRUCTIONS

  1. Start by putting a pot of water on the stove for your pasta, and add 3 oz of salt to the water.

  2. Add Extra Virgin Olive Oil and Pancetta to another pot and render/cook pancetta until brown.

  3. While the pancetta is cooking you can chop your onions, celery, carrots, and garlic and add them to the pot after the pancetta is browned, and sweat the vegetables.

  4. Add Cannellini beans to the pot, you can rinse them first if you like, I use the syrup!

  5. Add Chicken Stock, and Marinara Sauce, or Canned Tomatoes.

  6. Add Chopped Basil and Parsley and season with Black Pepper. Wait until the very end to add any salt if needed.

  7. Cook your pasta as soon as the water starts to boil to time everything correctly.

  8. Add pasta to your pot if serving right away, if not add pasta as needed before serving.

  9. Turn off heat and add Pecorino Romano Cheese.

  10. Place Pasta Fagioli in a bowl and top it with Fresh Chopped Parsley and Pecorino Romano Cheese.
