SHRIMP AND SCALLOPS GARLIC & OIL w/ ANGEL HAIR PASTA INGREDIENTS

  • 1 lb. - U-15 Shrimp

  • ½ lb. - Sea Scallops

  • 6 oz. Extra Virgin Olive Oil - Plus more if needed

  • 6 Cloves Garlic

  • 6 Fillets of Anchovy in Oil

  • ½ Fresh Lemon

  • 12 Teardrop Tomatoes

  • 1 tbsp. Fresh Parsley

  • 6 Fresh Basil Leaves

  • Salt and Pepper to taste

  • 1 tsp. Garlic Powder

  • ½ tsp. Smoked Paprika

  • ½ lb. Angel Hair Pasta

  • 2 qt. Water with 1 tbsp. of Salt


SHRIMP AND SCALLOPS GARLIC & OIL COOKING INSTRUCTIONS

  1. Start by heating up a pot of water for your pasta and add a tablespoon of salt to the water.

  2. If needed, peel shrimp, and leave tail on. Pat dry with a paper towel, and season with salt & pepper and set aside.

  3. Season Scallops on both sides with Salt & Pepper, Garlic Powder and Smoked Paprika, mix together, and set aside.

  4. Cut Anchovy into smaller pieces and set aside.

  5. Cut lemon into two ¼ wedges and set aside.

  6. Add enough EVOO 3-4 oz. to coat the pan about ¼ to ½ inch high, and heat up. You can add the rest later.

  7. Smash and peel garlic and to the pan with the oil and lightly brown the garlic and remove from the pan and set aside.

  8. Add Anchovy and dissolve in the hot oil.

  9. Add Scallops, and brown them on both sides, cook about 80%, remove and set aside.

  10. Add Shrimp and cook them on both sides about 80%.

  11. Now add Scallops, Garlic and Tomatoes, Lemon Juice, Squeezed Lemon Wedges and the remaining Oil to the pan, mix well together and cook for about 2 minutes. Cover and shut off the heat. The tomatoes only need to cook about 50%.

  12. Cook Angel Hair Pasta Al Dente and add pasta and 3 oz. of pasta water to the Shrimp and Scallops pan, and fresh chopped parsley and basil, and mix well while completely coating the pasta with garlic and oil. (Add more Extra Virgin Olive Oil if needed)

  13. Place on a plate.
