We will show you how to make this very delicious and very easy recipe.
CHICKEN FRANCAISE INGREDIENTS
3-4 large skinless boneless chicken breast
1/2 cup extra virgin olive oil
1 1/2 cup all-purpose flour
2-3 large eggs
3/4 stick (3oz) salted butter
1/2 cup dry white wine
1 cup chicken broth
1/2 fresh lemon juice + 1/2 lemon, thinly sliced
1/4 cup chopped fresh Italian flat-leaf parsley
2 garlic cloves
1 tablespoon Pecorino Romano cheese grated
1/2 teaspoon salt
1/2 teaspoon black pepper
Cooking Instructions
Trim and Pound Chicken.
Add EVOO and on medium heat, brown garlic and remove
Add Eggs, Fresh Parsley, Pecorino Romano Cheese, and Salt and Pepper to a bowl and blend together
Add 1 oz. Butter to the pan and heat up
Dredge chicken in flour, shake off excess flour and place in egg wash mixture, and test EVOO heat with a little egg to see if is hot and add chicken to the pan.
On medium heat brown Chicken on both sides and remove from pan (around 2 mins each side).
You may need to add more oil as you go, just make sure the oil heats up before adding the Chicken.
After cooking all your Chicken, add White Wine and deglaze the pan and reduce it to half.
Add the Chicken Stock (12 oz.).
Add 2 oz. Butter and Lemon Juice
Add 2 oz. Flour to the Chicken Stock and mix well together and add to the pan and simmer for 10 mins on low heat to cook out the flour taste.
Place chicken back in the pan and cook on medium heat for 5 minutes.
Top with chopped Parsley.
You’re Done!
Serve with rice or over pasta
