FRIED CALAMARI INGREDIENTS
2 ½ lbs. Raw Calamari
2 Cups Flour
2 Tbsp. Paprika
Canola Oil (enough to submerge the calamari while cooking)
1 Tbsp. Salt
1 Tbsp. Black Pepper.
FRIED CALAMARI COOKING INSTRUCTIONS
Start by defrosting if frozen, and cleaning the Calamari. I like to flip the tubes inside out and clean the inside too, but it is not necessary.
After cleaning, cut them into ½ inch wide rings. Place back in the bowl and wash with cold water and ¼ cup of salt.
Drain and add some water back to the bowl with the Calamari. The trick is you need to keep the calamari moist as you add it to the flour.
Add 2 cups of Flour into a bowl along with 2 tbsp. of Paprika, 1 tbsp. Salt and 1 tbsp. Black Pepper and mix together.
Add Canola Oil to your pot or fryer. The temp of the oil needs to be around 350 degrees Fahrenheit.
Once your oil reaches 350 degrees, you can start to fry the Calamari.
Place Calamari rings in a cup or bowl around 1-2 cups depending on how big the pot or fryer is that you are using. You can not over crowd the Calamari while frying or the flour will not stick.
Make sure that the Calamari is moist and add it to the flour mixture, coat well and shake off excess flour, add the Calamari to the hot oil and give a light toss to make sure they are not sticking together.
Cook for about 3-4 minutes and try one to make sure it is cooked and crunchy. Do not overcook or they will be like rubber bands.

MARINARA SAUCE INGREDIENTS
2 28 oz. Cans Crushed Tomato.
2-4 Cloves Garlic.
¼ cup Fresh Basil.
¼ cup Fresh Parsley.
¼ cup Extra Virgin Olive Oil. (EVOO)
Salt and Pepper. (to taste)
MARINARA SAUCE COOKING INSTRUCTIONS
Start by peeling the garlic and try to leave whole.
Add Extra Virgin Olive Oil and Garlic to the pot, brown garlic, remove and set aside.
Add Tomatoes, Chopped Basil, Chopped Parsley and Salt and Pepper to taste.
Sir every ten minutes or so.
Cook for 30 minutes on low simmer.
