FARFALLE SHRIMP AND SPINACH - Ya’Eat Cooking Channel Servings: 4 | Prep Time 10 | Cooking Time - 20 mins
FARFALLE SHRIMP AND SPINACH INGREDIENTS
1 ½ lb. 26-30 Shrimp
1 lb. Fresh Spinach
3 Cups Chicken Stock
4 Cloves Garlic
Extra Virgin Olive Oil
4 oz. Pecorino Romano Cheese
Salt and Pepper to taste
2 oz. All-Purpose Flour
1 lb. Farfalle Pasta
Cooking Instructions
Peel, clean, and devein Shrimp, leave tails on.
Add 32 oz. of water, and 2 oz. salt to pot and put on high flame
Peel and slice garlic, if garlic pieces are large cut in half first.
Place Shrimp in a bag and add 2 oz. of flour and shake.
Coat pan with EVOO and once your oil is hot add the shrimp and cook for about 2-3 mins on high heat. Cook shrimp to 75% and remove from pan.
In the same pan while it is still hot, add more EVOO and add the sliced garlic
Lightly brown garlic and add spinach, the moisture from the spinach will stop the garlic from browning.
Sauté the spinach and garlic until spinach reduces by volume to about 70%
Add Farfalle to boiling water and cook Al Dente
Add the shrimp back to the pan
Add most of the chicken stock or your desired amount and simmer for 2 minutes.
Shut off Flame and add Pecorino Romano Cheese and blend in.
Season with Salt and Pepper
Drain pasta and add to shrimp and spinach.
