ORECCHIETTE WITH SAUSAGE AND BROCCOLI RABE INGREDIENTS

  • 1 ½ lb. Sweet Italian Sausage.

  • 1 Bunch Broccoli Rabe.

  • 3 Cups Chicken Stock.

  • ½ Cup Grated Pecorino Romano Cheese.

  • 3 oz. Extra Virgin Olive Oil - (more if needed).

  • 3-4 Garlic Cloves.

  • Salt and Pepper to taste.

  • 1 lb. Orecchiette Pasta.

  • 2 qt. Water with 1 tbsp. of Salt (Blanch Broccoli Rabe).

  • 2 qt. Water with 1 tbsp. of Salt (Cook Pasta).

ORECCHIETTE WITH SAUSAGE AND BROCCOLI RABE COOKING INSTRUCTIONS

  1. Start by heating up a pot of water to blanch the Broccoli Rabe.

  2. Cut tips of the Broccoli Rabe and discard, and then cut into pieces about 2 inches in length and wash.

  3. Place Broccoli Rabe into the boiling water and balance them for 2 minutes or cook about 50%. Cool with cold water and drain. Place it on the side.

  4. Add another pot of water with salt to the stove to cook pasta.

  5. Peel garlic and leave whole, you can cut them in half if they are large.

  6. Place Oil and Garlic into the pan and brown the garlic, remove and set aside.

  7. While your garlic is browning you can remove the sausage from the casing.

  8. After removing the garlic from the pan, you can add your sausage, and break it up into bite size pieces while cooking. Slice cooked garlic and add back to the pan and cook the sausage until brown.

  9. Add the Broccoli Rabe to the pan.

  10. Add 3 cups of Chicken Stock, and simmer until Broccoli Rabe is about 90% cooked. Turn off heat and add Pecorino Romano Cheese.

  11. Adjust seasoning with salt and pepper.

  12. Cook your pasta Al Dente and add to a bowl, and add some sauce to the bowl and toss around.

  13. Place it on a plate, and make it look nice. Top it off with some shaved Pecorino Romano Cheese and Extra Virgin Olive Oil.
